My husband and I entertain often and we just love it… However, as an Italian I am always worried about not having enough food – Are you like that too? I had picked up some leeks (I don’t remember why at that time) and I always have white or orange sweet potatoes in my house.
Last minute I decided to make a soup. Normally I hand out a cocktail when company arrives but this time I gave everyone a little taste of my soup! Went over perfect – then the drinking began.
This is a great fall recipe and follows the paleo diet! Enjoy1
Tips on how to clean leeks is below!
Over medium heat cook leeks in butter with salt and pepper in a sauce pan. Cover pan, cook on low heat for 10 minutes. Check often. Do not brown the leeks.
Add water, broth, and potatoes. Bring to a low simmer and cook for 20 minutes. Scoop about half of the soup mixture into a blender, puree and return to pan. Add marjoram and thyme.
Taste for any additional salt or pepper.

A leek is in the onion family and is grown in the dirt. This means there is dirt inside the layers. We need to clean before enjoying for soups or sauté. The best way to do this is by following my easy steps.
1. Cut and discard the dark green leaves an inch or so above the white part of the stalk (the greens are tough and bitter). Next trim and discard the roots (unless they are already trimmed). Halve the remaining stalk lengthwise, then cut into slices of the desired thickness.
2. Fill a bowl with cold water, add the cut leeks, and swish them around a few times using your hands to loosen up the layers. Then use a slotted spoon or your hands and remove from the water and place in a bowl or platter. Discard the dirty water.
3. Repeat step 2 then prepare your leeks.
