Salmon with lemon, capers, and thyme

Italians love lemon and capers.  Salmon goes great with these flavors and you can have this on the table in no time at all.  You can cook the salmon in the 1 pound piece of slice for individual servings and the cooking time will be about 5 minutes less.

Ingredients

  • 1 pound salmon
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1 1/2 teaspoon dried thyme
  • 1 lemon, thinly sliced (will need 4-5 slices)
  • 1 tablespoons capers, drained

Directions

  1. Preheat oven to 400° F. Prepare a baking sheet or baking pan lined with parchment paper (for easy cleaning).

  2. Drizzle a little extra-virgin olive oil on the parchment paper then place the salmon skin side down.

  3. Drizzle a little extra-virgin olive oil on the salmon then season with salt, pepper and most of the thyme.

  4. Top with lemon slices and a little extra dried thyme.

  5. Bake for 25 minutes.

  6. When ready to serve, add capers over the fish.

    Cindy’s Tip: This is a great recipe to wrap in foil and grill outdoors!
