I made these for my pulled pork and brought them to Better Connecticut. These were fantastic and everyone enjoyed them! I of course, took a bite before packing them for the station!
I used a muffin top tin and it worked great. You can keep these as a muffin top or slice in half for a bun! Either way - perfect.. Enjoy
Preheat oven to 350 degrees. Lightly brush 4 muffin top tins with coconut oil.
In a mixing bowl add in almond flour, tapioca flour, baking powder and salt. Use a fork to combine well together. Create a well in the middle of the dry mixture and add in eggs and whisk into the batter. Add in coconut oil and vinegar then whisk well.
Divide mixture into the 4 prepared muffin tops. (The batter will almost reach the top of the tin). Bake for 13-15 minutes or until a toothpick comes out clean.
Move to a rack to cool. Enjoy as is or slice in half to make a great bun. Store in a sealable bag.
