Paleo Chocolate Chip Cookies

The first time I made these they vanished very fast..mostly from me eating them!  Now you can find them on my counter on a regular basis, but I do share them!

Ingredients

  • 1/2 cup palm shortening
  • 1/2 cup coconut sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon sea salt
  • 1 teaspoon vanilla
  • 3 cups almond flour
  • 1 and 1/4 cups chocolate chips

Directions

  1. Preheat oven to 375 degrees.

    Prepare a large baking sheet with parchment paper.

  2. In a large mixing bowl, combine palm shortening and coconut sugar and start to blend using a hand mixer or whisk.  Then add in eggs, baking soda, baking powder and vanilla until smooth.

  3. Add in almond flour and blend for 1 minute.

     

  4. Fold in chocolate chips.

  5. Scoop cookie dough as balls in about a tablespoon size onto your prepared baking sheet.  Bake for 13-14 minutes.

     

  6. Let cool on a wire rack then serve on a platter!
