Preheat oven to 150 degrees F and set a baking sheet pan in the oven lined with foil. In a large bowl whisk eggs and add arrowroot powder or gluten free flour.
In a large baking dish add all of the breading ingredients (except for the oil) and combine together with a fork.
Take your deep fryer or large cast iron pan and fill 1/2of the way with coconut oil.Using a candy thermometer heat to 350 degrees F.
In batched add a handful of shrimp into egg batter then using a slotted spoon coat in the breading. Add into the fryer for about 7-8 minutes. (I recommend you doing a test batch with only 2 shrimp and time them until they are done) The shrimp will turn pink.
As you do this in batches carefully spoon from the hot oil to the heated pan in the oven.
Warm your marinara sauce and have it ready for dipping!
