Super Bowl Slow Cooker Pulled Pork

 

It's almost Super Bowl Sunday and we are cheering for the Patriots!  We are having a house full and I will be dropping this in the slow cooker Sunday morning then shredding before the game and keeping warm until our guests are ready to dig in.

Serving with cole slaw and for those who want a bun - we will  have one for you!  I love to add cole slaw to a bowl then top it with the pulled pork.  Perfect and #Paleo!

 

Ingredients

  • 5-6 pound pork butt
  • 1 teaspoon sea salt
  • 1 teaspoon of fresh ground black pepper
  • 1 cup store bought BBQ sauce (or make your own) Plus more
  • 2-3 cloves garlic, minced
  • 2 large yellow onions, peeled and sliced

Directions

  1. Heat slow cooker to medium or set for 7 hours (mine will adjust from high to medium when I set the hours)

  2. Season pork with salt and pepper them place in the slow cooker.

  3. Add roast to the slow cooker and pour in mixture. Then add onions to the top! Rub mixture over the pork roast.

  4. Pour in the BBQ sauce then add in garlic and onions. Cover and get ready for the game! 

  5. When the 7 hours is up.  Keep the slow cooker on a low temperature.  Remove the pork and set on a platter. Discard the BBQ sauce, garlic and onions.  

  6. Use 2 forks and shred the pork then place back in the slow cooker.  Pour another cup of BBQ sauce, cover and keep warm until ready to serve!

    Keep a bowl of BBQ sauce handy for serving.
