Are you looking for hearty breakfast? The best part of frittata's is that you can add your favorite ingredients. I remember when my French grandfather loves potatoes and eggs and he would cook them together in a very hot cast iron pan and the edges would burn but we loved that part. My grandmother used to bake them together in the oven in a clear baking dish and it was amazing. Either way this is a great breakfast. I love a little potato in my eggs once in a while and I add milk and cheese but you can omit based on your diet or nutrition plan. This is a gluten free breakfast and of course Italian style. Enjoy
PS - I happened to have 3 slices or organic cheddar cheese in my refrigerator so that is what I used!
In a medium mixing bowl add eggs and whisk together. Continue whisking and add in salt, pepper, parsley, red pepper flakes and milk until combined well.
Heat cast iron pan on a medium-high temperature. Cook bacon until it become crispy. (about 7 minutes). Take out of the pan and let cool then cut up into small pieces.
In the same pan over medium-high heat using the bacon fat add in the potato pieces to create an even layer in the pan. Cook for 2 minutes on each side; until brown. Remove from pan.
Add in spinach and let cook for 2 minutes. Just until it starts to wilt. Remove from pan.
Wipe down the pan of any excess bacon fat with a white paper towel. Keep pan on medium heat.
Add in 1 tablespoon of olive oil to your cast iron pan and whoosh around so the oil coats the entire pan even the sides.
Heat oven to broil.
Start by adding the potatoes to the bottom of the pan creating a single layer. Then add in eggs, spinach and bacon. Cut up the cheese and add them to the pan as well or grated. Let cook until the edges become brown. You can slide a spatula around the edges. After about 3-4 minutes put the pan in the oven and broil for 3-4 minutes. Keep an eye on the broiler as each oven is different. You want the top to be browned.
Take out of the oven, let cool for 2 minutes then slide onto a board, cut and enjoy!
Cindy's Tip: If you do not have an oven-safe pan then sauté your bacon, potatoes and spinach. Preheat an oven to 350 degrees and coat your oven safe glass pan (9x13) and add all of the ingredients to you baking dish and bake for 20 minutes or until the top if firm.
