We were grilling up steak on the Big Green Egg and I decided to grill these shrimp for my salad. The smoke flavor really made this salad more amazing!
Heat your BGE to 350 degrees F.
Add prepared shrimp on a large bowl and drizzle about 2 tablespoons of oil and season with salt and pepper. Toss around. Place on the direct heat and grill each side for 2 minutes. Remove from grill.
In a bowl whisk orange juice, lime zest, lime juice, oil, Dijon mustard, 1/2 teaspoon salt and 1/2 teaspoon of pepper.
Add shrimp, scallions, red onion and jalapeńo. Toss to mix. Place in a serving platter to serve or let sit in the refrigerator until ready to enjoy!
