Chinese Chicken and Lettuce Wraps

Sometimes you just want Chinese food but not all of the calories and MSG from takeout. It's so easy to make better than takeout Chinese food at home.  

I served this dish with my Cabbage and Cauliflower Fried Rice and Scallion Pancakes.  All Paleo and delicious.  Enjoy takeout Chinese at home!

 

Ingredients

  • 1 tablespoon olive oil
  • 1 boneless breast chicken, chopped into small pieces
  • 1 clove garlic, minced
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon freshly grated ginger
  • 3 green scallions, thinly sliced
  • Salt and Pepper to taste
  • 1 head butter lettuce

Directions

  1. Heat olive oil in a sauté pan medium high heat. Add  chopped chicken and cook until browned, about 3-5 minutes. Season lightly with salt and pepper.

  2. Stir in garlic, hoisin sauce, soy sauce, rice wine vinegar and ginger to the chicken and let cook together for 1-2 minutes while stirring around together.

  3. Move from heat and toss in scallions. Taste for any additional seasoning.  Put in a bowl. Then add your lettuce on a plate.

  4. To serve add a large tablespoon of chicken in the lettuce.  Top with soy sauce or coconut aminos.  Fold or roll and enjoy!

    Note:  If you like it a little spicy then top with a little sriracha!  That's what I do and it is very good.  Enjoy
