Here is my Paleo recipe for Stuffed Crepes! Enjoy…

Ingredients for Crepe

  • 2 large eggs
  • 2 tablespoons oil
  • 1 teaspoon agave nectar
  • 2 tablespoons coconut flour
  • 3 tablespoons coconut milk
  • 2 tablespoons water
  • 1 teaspoon good quality vanilla
  • 1/8 teaspoon sea salt

Directions

  1. In a large bowl combine the ingredients for the crepes and whisk well.
  2. Heat a non-stick 8″ sauté pan over medium heat.
  3. Using a small ladle pour in pan. Hold the handle and swirl the mixture around the pan until it is a thin even layer.
  4. Cook until the edges are dry and brown. Flip carefully and brown on the other side (about 3 minutes each side).
  5. Put on a platter and continue with other crepes. You may also want to keep your oven on low to keep warm as you continue.
  6. In a large bowl whisk eggs, add salt and pepper
  7. Head a large saute pan and add a little olive oil or coconut oil. Over medium heat. Add eggs and cook until done.
  8. To assemble first add meat on one half of the crepe, add some of the egg mixture then roll by tucking in the sides then rolling.

NOTE: This goes great with sliced avocado and a little syrup for dipping!
Of course you can fill with fresh fruit too!!

  2. I always get confused- should this recipe be made with carton coconut milk or the thicker canned coconut milk? Thanks, looking forward to marking this

  3. Hi Tracy,
    When I first made them I used the can coconut milk. Another time I used the carton but didn’t use as much. I don’t remember exactly how much I used but poured it in slowly while mixing. Let me know how they come out. I love these crepes.
