3 1/2 tablespoons all-purpose flour or gluten free flour
1 1/2 teaspoon paprika
2 tablespoons olive oil
Preheat oven to 350 degrees F
Pound chicken breasts with a mallet if they are too thick. Season both sides with salt and pepper.
Spread a think layer of dijon mustard the place a slice of cheese then ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks.
Using a plate mix the flour and paprika together with a fork. Spread another light layer of dijon mustard on the outside of the chicken then lightly coat with flour mixture.
Using a large baking dish or baking sheet coat with olive oil. Place chicken in dish and bake for 35-40 minutes. Until golden brown.
Remove the toothpicks, and transfer the breasts to a warm platter. Serve warm with your favorite side.
