Cucumber Salad

Ingredients

  • 2 English cucumbers
  • 1 tablespoons salt
  • 1 tablespoon plus 1 teaspoon white wine vinegar
  • 2 teaspoons dried dill or 2 tablespoons fresh plus extra to garnish

Directions

  1. Thinly slice the cucumbers and season with salt.
  2. Place in a colander and let it sit and drain for 20 minutes.
  3. Put cucumbers in a large bowl and add white wine vinegar and toss to coat. Cover and refrigerate until ready to serve.
  4. Add extra dill for garnish prior to serving!

  1. Such simple beauty, cucumbers. Your pic is lovely. I just adore simple salads like this! The Iranians do a similar salad but use dried mint instead. Sometimes they add homemade yogurt or a bit of sour cream they toss the cukes in before adding the mint. You might like to give that a whirl sometime. It’s really good!
