Coconut Pancakes with Warm Blueberry Sauce

  • 1/2 cup coconut flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 cup coconut milk
  • 4 large eggs
  • 2 teaspoons vanilla
  • 2 teaspoons ground cinnamon

Blueberry Sauce Recipe

  • 1 cup blueberries (I like using frozen)
  • 1/2 cup unsweetened pineapple juice
  • 1 teaspoon arrowroot powder
  • 1 tablespoon coconut crystals
  • 1/4 cup water

Coconut Flour Pancake Recipe

  1. Heat non-stick griddle to 400 degrees.
  2. Combine dry ingredients.
  3. In a separate bowl, combine wet ingredients, and mix well.
  4. Slowly add dry ingredients.
  5. Pour batter on griddle and let them cook for about 4-5 minutes on each side.
  6. While they are cooking, make the blueberry sauce.

Blueberry Sauce Recipe

  1. Heat blueberries and pineapple juice to a slow boil.
  2. In a separate dish, stir arrowroot powder, coconut crystals and water together until dissolved.
  3. Add mixture to blueberry sauce and stir until thickens, on low heat.
  4. Pour warm sauce over coconut pancakes.

  1. Okay I don’t know what I did wrong but they turned out mealy, and not much taste to them…any suggestions??
