Coconut Pancakes with Warm Blueberry Sauce

Ingredients
- 1/2 cup coconut flour
- 1 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 cup coconut milk
- 4 large eggs
- 2 teaspoons vanilla
- 2 teaspoons ground cinnamon
Blueberry Sauce Recipe
- 1 cup blueberries (I like using frozen)
- 1/2 cup unsweetened pineapple juice
- 1 teaspoon arrowroot powder
- 1 tablespoon coconut crystals
- 1/4 cup water
Coconut Flour Pancake Recipe
- Heat non-stick griddle to 400 degrees.
- Combine dry ingredients.
- In a separate bowl, combine wet ingredients, and mix well.
- Slowly add dry ingredients.
- Pour batter on griddle and let them cook for about 4-5 minutes on each side.
- While they are cooking, make the blueberry sauce.
Blueberry Sauce Recipe
- Heat blueberries and pineapple juice to a slow boil.
- In a separate dish, stir arrowroot powder, coconut crystals and water together until dissolved.
- Add mixture to blueberry sauce and stir until thickens, on low heat.
- Pour warm sauce over coconut pancakes.

Okay I don’t know what I did wrong but they turned out mealy, and not much taste to them…any suggestions??
