All About Short Ribs

I remember when short ribs were the cheapest cut of meat and butchers would give them away. This cut was also noted as a less desirable piece of meat.  Now you can find them in grocery stores on a regular basis.  

Wikipedia describes short ribs as Short ribs are a cut of beef taken from the brisket, chuck, plate, or rib areas of beef cattle. They consist of a short portion of the rib bone, which is overlain by meat which varies in thickness.

Short ribs are best when braised and cooked low and slow for many hours.  They become a tender meat that really does melt in your mouth.  I like to find a thicker cut yet shorter in length to fit in my pan.
