Recently we visited our friends in Colorado for a long weekend. The weather was spring like in early March and we were able to walk around Boulder and enjoy the wonderful shopping and restaurants.
We did enjoy great dinners out but sometimes it's nice to stay in and cook together while enjoying nice wine and playing trivial pursuit (that's another story).
Monica and I were out shopping and picked up a few things while out and of course she had fresh vegetables in the house. I found Barilla no-boil spaghetti and had to get a box. I wasn't planning on making it - perhaps bringing it home but wanted to grab a box anyway.
Also, they had just remodeled their kitchen and it is beautiful. I am equivalent to a kid in a candy store when I am in someones kitchen. Please let me cook!
While we were enjoying cheese and crackers with wine and deciding where to go for dinner after the guys played golf and a full day of shopping. Nobody could come up with a plan so I stepped in and said how about I cook. I wanted to use the pasta and Monica had all of the other ingredients for me to prepare an easy dinner. We roasted a chicken which was Monica's recipe and I created a one pot pasta dish. So easy.. Check it out...
All I did was shave a bag of brussels sprouts then sauté with olive oil, salt and pepper. Remove them from the pot then sauté up zucchini, tomatoes and onions. Kept all of the cooked vegetables in a bow while I followed the directions on the spaghetti box they tossed the vegetables back in the pan. I reserved some of the pasta water and drizzled extra virgin olive oil with freshly grated parmesan cheese. It was the perfect side dish to Monica's chicken.
They also have a great wine selection and we went for the Justin along with another night of trivial pursuit. Not sure where I was in the 90's but I couldn't answer very many questions but we had lots of laughs.
RIP Speckles. We are glad to have spent the weekend with you sharing lots of love, snuggles, kisses and treats. You were so happy sitting on the deck enjoying the sun during your last days. You were loved and will forever be in our hearts! xo Cindy
